When it comes to labor-saving baking, the benefits of sheet pan baking are threefold. First, volume: you can make a large amount of dessert for a crowd or a bake sale on a single backing sheet. Second, there’s quick baking time: the large surface area and shallow sides of a sheet pan allow cakes to bake more quickly than in traditional cake pans. And third, faster cooling: these same shallow pans allow cooling to happen in a fraction of the time, helping to get that cake or cookie to the table and into your guests’ mouths, all that much faster.

Molly Gilbert is the founder of the food blog Dunk & Crumble. As a graduate of the French Culinary Institute (now part of the Institute of Culinary Education), she has had roles as a cooking instructor, private chef, and recipe tester in the kitchen of Saveur. She lives in Seattle with her husband and three young kids.
